Deviled Eggs

  • 6 hard-boiled eggs – 6 Carbs
  • 2 tablespoons mayonnaise – 0 carbs
  • 1 1/2 teaspoons mustard – 0 carbs
  • freshly ground black pepper
  • paprika

Place eggs in a pot and cover with water. Bring to a boil and then turn down heat to a simmer. Cook for 10 minutes. Drain water and add cold water. Drain again, and add cold water again (this is to stop the cooking process).

Halve eggs; scoop yolks into a small bowl. Mash well; add mayonnaise and mustard. pepper to taste. Using a small teaspoon, fill egg white halves. Sprinkle with a little pepper and/or paprika, if desired.

Makes 12 halves @ .5 carbs each.
