My Low Carb ‘Fake’ Potato Salad
How I make my Low Carb potato salad.’, ‘
Ingredients
– 1 Turnip = about 1.5 – 2 cups = 3 carbs / cup
– 6 Eggs = 6 carbs
– 2 Frankfurter sausages = 0 carbs
– 2 dill pickles = I used dill pickle chips and used about 2 pickles worth = 3 carbs
– 4 or 5 heaping table spoons of Mayo = 0 carbs
– 2 table spoons mustard = 0 carbs
Spices:
Pepper, salt, onion powder
Cut the turnipe into cubes and put in microwave safe bowl with 2 tablespoons of water. Cover with plastic wrap and leave a small opening. microwave on high for 3 – 4 minutes. Drain water.
Boil water, add 6 eggs and reduce heat to keep boil for 10 minutes. Drain water, and add cold water. Drain again, and add cold water again. These keeps the eggs from continuing to cook inside after removing from stove.
dice up eggs, pickle slices, sauges and add to bowl with turnipe cubes. Add mayo and mustard, mix.
Add spices to taste.
Total carbs = 15
