My version of the Cooked Egg Nog low carb recipe.’, ‘

Cooked Egg Nog


  • 6 eggs = 6g
  • 1/4 cup splenda = 0g
  • 1/4 teaspoon salt, optional
  • 1.5 cups Heavy cream = 0g
  • 2.5 cups water = 0g
  • 1 teaspoon vanilla = 0g


In large saucepan, beat together eggs, sugar and salt, if desired. Mix water and heavy cream and stir in 2 cups of this mixture. Cook over low heat, stirring constantly, until mixture is thick enough to coat a metal spoon with a thin film and reaches at least 160°F. Remove from heat. Stir in remaining 2 cups cream/water and vanilla. Cover and refrigerate until thoroughly chilled, several hours or overnight.

Makes 4 servings = 1.5 carbs each
